Vegan Tinga
Mexican dish with a very tasty flavor
Perfect for a meatless day! This dish is eaten either for breakfast or lunch in tacos.
Serves 4 people
Ingredients:
-2 carrots julienne
-2 zucchinis julienne
-1 onion julienne
-Tortillas
Sauce:
-5 tomatoes
-1 chipotle
-1 garlic
-A piece of axiote
-1/8 onion
-1/4 cup water
-salt and pepper
Process:
Combine all the sauce ingredients on a blender; tomatoes, chipotle, garlic, axiote, onion, water. Set aside. On a hot skillet place some oil and put the onion for 3-5 minutes until tender. Place the carrots and zucchini and cook for 2-3 minutes. Add the sauce and cook on low heat for 10 minutes. Place the tinga over some tortillas and enjoy!!
