Beet Ravioli
My first raw meal
Beet Ravioli is the best way to start your first Raw Kitchen dish. It's also a favourite in my home and it is husband and kids friendly. Be sure to have time to soak your cashews and all the ingredients hard to find like nutritional yeast. Enjoy! This was a dish made for out detox with Mindful Habits!
Ingredients:
-2 big beets cut in squares (you can use the rest in a juice)
-1 1/2 cup of raw cashews soaked in water at least for 3 hours
-2 lime (juice)
-1 green onion
-1 cup of parsley
-1 sweet yellow pepper
-1 cup of pine nuts soaked for 30 minutes
-1/2 cup of pistachios soaked for 30 minutes
-1/2 cup of spinach
-1 cup of basil
- 1/2 cup of Nutritional yeast *optional*
-Olive oil
With your kitchen mandolin, or a peeler, make squares with your beets. Place the squares in pairs on a tray and brush with olive oil. Set aside.
Filling:
-Rinse your soaked raw cashews and place them in your food processor with the onion, 1 tablespoon of lime juice, parsley, salt and pepper. You can use the nutritional yeast and add it to give a more cheesy flavour. Set your filling aside.
Pesto:
-Rinse your soaked pistachios and process with 1 cup of basil, 1/2 of spinach, 4 tablespoons of olive oil, 1/4 tablespoon of kosher salt, 1 teaspoon of lime juice, and season with pepper. It must keep a chunky consistency. Set aside.
Yellow Pepper Sauce:
-Rinse your soaked pine nuts and process with 1/2 tablespoon of lime juice, half green onion (white part), 1/4 tablespoon of kosher salt, 1/2 tablespoon of olive oil and blend until you have a yellow sauce.
Ensemble:
-Now that you have all your ingredients ready, ensemble your ravioli. Place one square in a plate and with a spoon place your "cheese" filling and cover with another beet square. Decorate with pesto and greens and yellow sauce. And voila! You have a raw dish that you will enjoy dearly.
