Panang Fish Curry
Easy lunch or dinner. Family will love it, and it does not require much time.
Ingredients:
- 3 fish filets. I used tilapia.
- 1 tablespoon fish sauce
-1 tablespoon de Panang Curry (Its a paste but you can use curry powder and mix with the coconut cream)
-1 can coconut cream
- 2 tablespoons chopped garlic
- 2 shallots chopped
-1 teaspoon brown sugar
- 2 limes (juice)
- 1 tablespoon sesame oil
-Avocado to top
First, simmer your fish filet with lime, salt and pepper.
Use a big skillet or wok and heat the sesame oil. Add the garlic and shallots and cook for 1 minute. Add the panang curry and half can of coconut cream. Mix until everything is well mixed. Add the fish sauce and the rest of the coconut cream. Bring to a boil. After simmer for 4-5 more minutes.
Now cook your fish. I cook mine whole and then chop it into pieces. You can cook it whole and even leave it like a soup. After your fish is cooked, incorporate the panang curry. I recommend only incorporating half and check for taste. If you want more, add more. Hope you enjoyed this!
