Mini Raw Apple Pies

Easy, healthy, delicious. A great alternative! 


These were not only easy to make, but a total hit. It was my sister's birthday and she's always been a clean eating gal. Hence, these magnificent (and really cute) Mini Raw Apple Pies. I took the recipe from Eating Bird Food (she commented on my IG pic) and made no changes whatsoever. Everything was pretty clear. Oh! Just remember, #soakyournuts. 

Ingredients:

Crust:

1 cup of medjool dates (previously soaked for 15 minutes) 

1/2 cup of unsweetened shredded coconut 

1/2 cup of almonds (previously soaked overnight) 

Apple Filling:

3 medium apples (I did not peel them, neither did the author) 

1 cup of medjool dates (previously soaked for 15 minutes)

3/4 cup fresh water 

1 teaspoon cinnamon (author just added 1/2 but love me some cinnamon) 

1/2 teaspoon salt

pinch of Nutmeg


First, place all the crust ingredients on the food processor and pulse until smooth. Here's a detail. Author calls for muffin tins with plastic paper. I tried it and failed so I used mini plastic containers for jello. However, it turned out I could also make the basket with my hands. More artsy! Once you have your baskets, (I had 10) put them in the freezer. 

For the filling, cut your apples on tiny squares. Set aside. 

Pulse all the rest of the ingredients for the filling until a syrup is formed. Top your apples with your syrup. I dare you to resist not to eat it! 

Now, my baskets are still on the freezer and I used them accordingly. I placed the apples on a sealed container on the fridge and whenever I feel like eating a pie, I take out my basket and then my filling. 

I can't resist the feeling that these with maybe 10 minutes on the oven must be heaven, but since this is a Raw Dessert I shall try for another occasion. I really hope you enjoy these as much as I did!
