Flour-Less Chocolate Cookies

Vegan Version of Chips Ahoy! 

My boyfriend thought I was joking when I said “no-flour cookies” for dessert. Usually when you’re on a diet or trying to stay healthy, you have to get used to the fact that things may not have the greatest taste as things with butter, fat, sugar and whatnot.

These flour-less cookies are definitely not the case. I dare everyone to try these at home and get back at me with feedback. It took me 10 minutes to arrange everything and 10 minutes on the oven.

*Make sure to soak your cashews for at least 3 hours. Always.


Ingredients:

-2 cups of raw cashews previously soaked for at least 3 hours.

-1/2 cup maple syrup

-1 tablespoon vanilla extract

-1/3 cup of raw cacao powder

-Unsweetened raw cacao chips

-1 teaspoon olive oil


Pre-heat oven at 175ºC

Place your cashews on a food processor until smooth. Then place the maple syrup, vanilla extract and the chocolate powder. Blend until all the ingredients are mixed together. Grease a big skillet and with a spoon form your cookies. Place the chocolate chips. Cook for 10 minutes in the oven.

Let cool completely before removing. They will have a tender consistency but will taste absolutely delicious! Voila!
