Coconut Cupcakes
A perfect way to start your cupcake journey
So, I've been dabbling in the whole cupcake adventure recently. I've been having trouble with the frostings and with the toppings. Generally, all the recipes for cupcakes seem tedious or long, and well, boring. So I decided to try this recipe which calls for a basic cupcake and start adding my favorite flavours as I go. For example, I had coconut and (Thank God) some condensed milk.
Ingredients:
-2 cups of all-purpose flour
-3 teaspoons of baking powder
-1/2 teaspoon salt
-3/4 cups sugar
-1 egg
-1 cup of milk
-1/4 olive oil
-Unsweetened Shredded Coconut
-1/2 can of condensed milk (Lechera in spanish)
Preheat oven at 400F (205C)
On a mixing bowl, combine dry ingredients; flour, salt and baking powder and flour. Make a whole in the center. On a different bowl whisk the egg and then add the milk and oil, then incorporate on the flour mix. Mix with a fork until well combined but do not beat. You will have a lumpy dough. Pour the batter on the cupcake tray.
I poured half batter, then condensed milk, then top with batter. On the top, I sprinkled unsweetened coconut. Bake for 25 minutes or until golden. Enjoy!
